The Wine
Ever since 1884 Borges has been eager to take up the challenge of producing wines of outstanding quality. The noble character of this Vintage follows a tradition which began at 1904, the time when the founders of Borges acquired Quinta da Soalheira.
Tasting Notes
Appearance - Deep ruby color.
Aroma - Very intense aroma, with notes of red berries such as blackberries and raspberries, combined with traces of mature plums and spices.
Taste - The taste reveals the aromatic sensations which will linger into a well structured finish with a great persistence.
Vinification
High quality wine selected for a long lasting aging. It is extraordinarily important the selectionof the vineyards as well as the quality of the grapes used. The grapes must arrive at the cellar in perfect conditions and are immediately crushed and then destemmed. They ferment for 3 to 4 days in contact with the skins, are immersed by regular remounting, in order to obtain more color and aromas. In due time, the skins are separated from the must and a grape brandy with 77% v/v is added, in order to obtain a wine with 20% alcohol and 100 to 120 g/l of reducing sugars.
The wine will stage in small oak barrels for a maximum of 2 years. Its evolution will be completed
in bottle.
Gastronomy
A Vintage that may be enjoyed on its own, but is also excellent with fatty
cheeses and desserts of chocolate or red fruits. Can create a unique experience for cigars lovers
